New Orleans and ALLIGATORS go together like hot – boiled crawfish on a summer day. These dinosaurs inhabited this region long before the earliest settles. Alligator provided an abundance of resources such as oils for steam engines skins for boots and tasty dishes. Officially a protected species under the Louisiana Department of Wildlife & Fisheries, we can live in harmony with these creatures for many years to come.
